- Produces all required prep items according to specifications in a clean and sanitized kitchen; has complete knowledge of the specifications of all prep items to be able to produce them
- Prepares all side items
- Prepares all grilled and fried foods
- Has complete knowledge of the specifications of all items to be able to produce them; prepares food following established production procedures and systems
- Determines the amount and type of food and supplies required using production systems; ensures availability of supplies and food or approved substitutions in adequate time for preparation
- Plans food production to coordinate with meal serving hours so that excellence, quality, temperature and appearance of food are preserved
- Accurately estimates cooking times; tests foods to ensure quality; assembles attractive food items; prepares food according to guest specifications
- Follows recommended procedures for handling and storing food supplies in order to control food-borne illnesses and food spoilage
- Keeps his/her work area, equipment and storage areas clean at all times; ensures proper sanitation methods are used at all times in the kitchen area
- Ensures that the work areas, dishes and operational equipment assigned are kept in optimum condition of cleanliness, according to the standards of excellence established by the company
- Checks all items for proper food contents, weight, appearance and quality
- Assists in putting deliveries away
- Completes food temperature checks before service
- Complies with established sanitation standards, personal hygiene and health standards
- Complies with all company training standards, rules, regulations, policies and procedures.
